The Evolution of Korea's Favorite Snack Tteokbokki
Kore’nin Favori Atistirmalik Yemegi Tteokbokki’nin Degisimi
Kore’nin pirinç kekleri ve baharatli biber ezmesinden yapilan sevgili yemegi Tteokbokki, “kirmizibiber sosu içerisinde karistirilmis kavruk pirinç ezmesi” olarak etiketlendiginde hepimize fazla resmi geliyor. Birçok Koreliye göre tteokbokki onlarin en çok sevdikleri yiyecek oldugu siralardaki, çocuklugun sicak, evcil hissini hatirlatiyor.
Her Korelinin kalbinde en ekonomik ve lezzetli atistirmaliklardan biri olarak özel bir yer kaplayan tteokbokki 57 yil sonra modern haliyle göründü.
Tteokbokki önceleri tamamen farkli pisiriliyordu. Chosun Hanedani yemek kitabina göre tteokbokki aslinda soya sosu aromali ve sigir eti, taze ya da kuru sebzeler ekleyerek yapilan hafif bir yemekti. Genellikle saray çevresini içeren yüksek sinif tarafindan yenirdi. Kraliyet Saray Mutfagi Enstitüsü’nden Prof. Han Bok-ryeo’ya göre “Baharatli yiyecekler insanlarin huzurunu kolayca bozabilir, böylece krala baharatli yiyecek ikram etmekten kaçinmak daima bir kuraldi.
Fakat büyük degisiklik 1953 yilinda, Seoul’un Sindang-dong semtinden Ma Bok-rim tteokbokkiye baharatli biber ezmesi ekleyerek yeniden icat ettiginde gerçeklesti. Birdenbire harap edici Kore Savasindan sonra halkin büyük bir çogunlugunun kalplerini ele geçirdi, bu ekonomik yiyecegi istediler. Simdi bildigimiz tteokbokki bu sekilde dogdu.

Tteokbokki, the beloved Korean dish made of rice cakes and spicy chili paste, sounds all too formal when labeled "stir-fried rice pasta cooked in red chili sauce." To most Koreans, tteokbokki evokes a warm, homely feeling of childhood, when it was most likely their favorite dish.
Occupying a special corner in every Korean's heart as one of the most affordable and tasty snacks, tteokbokki appeared in its modern form 57 years ago.
Before then it was cooked entirely differently. According to a Chosun Dynasty cookbook, tteokbokki was originally a mild dish flavored with soy sauce and made with the addition of beef, and fresh or dried vegetables. It was usually eaten by the upper class, including the royal court. According to Prof. Han Bok-ryeo of the Institute of Royal Court Cuisine, "Spicy food can easily upset people's composure, so it was always a rule of royal courts to avoid serving spicy food to the king."
But a drastic change came in 1953, when Ma Bok-rim of Seoul's Sindang-dong neighborhood reinvented tteokbokki by adding spicy chili paste. It instantly captured the hearts of the masses who, after the devastating Korean War, wanted affordable food. Tteokbokki as we know it now was born.
It was further transformed in the 1970s when ingredients such as chewy fish cakes, clear noodles, boiled eggs and spring onion were added. In the 1980s, tteokbokki gained a foothold in the instant food market by appearing on the shelves of supermarkets. In 2000s, it further evolved by appearing in fusion forms, blending western flavors with traditional Korean ones.
As tteokbokki continues to make strides and develop global appeal, it is now served even in upscale fusion restaurants. Its popularity here can be attributed to the fact that it has been continuously transformed to match changing tastes, proving the dish's potential to become an international success.

Interview with Fox International Production Creative Executive Paul HUH

KOBIZ: 2012'de iki filmi piyasaya sunmaya hazirlaniyorsunuz. Bize bunun hakkinda bilgi verebilir misiniz?

Will this be a source of new energy for the Korean film industry, or a new era in which it will have to compete with Hollywood’s studio system in making Korean-language films? Fox International Production (FIP), part of the 20th Century Fox Entertainment group, has declared it is officially entering the Korean film production market. FIP was established in 2008 to invest in, produce and distribute local language films in major territories around the world. Simply put, this means that a major Hollywood film company will be making Korean-language films in Korea. Dohoon KIM met with FIP’s Korean Creative Executive Paul HUH to talk about their plans. After studying finance in New York, Huh started working in the Korean film industry first at MK Pictures's international sales team and later became a producer.
KOBIZ:What made FIP decide to go directly into investing in, producing and distributing Korean films?
HUH: The Korean market is an important one that has a 50% local film market share. FIP thought it was a country worth starting direct production, investment and distribution in, the same way it did with countries like India, China, Russia, Germany, and Japan. Actually, when FIP first carried out co-production and partial investment/distribution on NA Hong-jin’s <The Yellow Sea>, there wasn’t anyone exclusively and centrally working on FIP’s projects in Korea. It’s been about a year, starting in January of last year when I entered the company, that we’ve been concentrating specifically on sourcing local productions.
KOBIZ: You’re planning to release two films in 2012. Tell us about that.
HUH: We are currently planning and developing five to six films at the moment, with an aim to release two this year. I can’t reveal details as yet. Both are mid-size budget films, directed by established filmmakers who have already directed one or two films. There’s no pressure at FIP to put out an exact number of films per year. We are planning to put out films gradually, as they are prepared.
KOBIZ: What are FIP’s criteria for selecting films to greenlight?
HUH: We choose films that will do well at the Korean box office. Of course, we keep foreign sales in mind as well, but the primary goal is to make films that can approach Korean audiences with Korean sentiments. A historical period piece that won’t do anything for foreign sales, as long as the script is good and it shows potential for the Korean market, can be greenlit without problem, too.
KOBIZ: As FIP’s Creative Executive in Korea, there must be pressure on you to keep communications smooth between the head office and Korean staff. Are there any systemic and/or cultural differences you have felt in the past year?
HUH: My biggest role is to keep the communications going well between the two sides. Personally, I have worked on productions in Korea if but for a short while, and I have experience toiling as the youngest of the production team as well. So I think that helps me fine-tune the differences in opinion more skillfully. There can be trial and error, but FIP has also already had experience coordinating opinions with local crews in places like India and China, so it shouldn’t be too hard reaching accords as we keep Korean practices in mind and if both sides compromise a bit.
KOBIZ: Don’t you think 20th Century Fox could be seen as invading Korea with Hollywood capital and systems?
HUH: Of course there will be people who think that. But, I don’t think Hollywood capital will snatch away market share from the Korean market. It is here to make money, but aside from making a profit in the limited market of Korea, our goal is also to use Fox’s distribution network to introduce these films to the global market, increase their gross and expand their opportunities to meet with audiences. In addition, just in the way Fox discovered director Timur Bekmambetov <Night Watch> in Russia and took him to Hollywood, it will be able to discover good directors and actors in Korea to launch in Hollywood, too.

Interview With Shinhwa
Shinhwa Ile Röportaj
"Ama en sonunda oldu." Oldukça imkansiz görünen seyler gerçeklestiginde insanlar bunu hep söylerler. Her yil sayisiz idol gelip geçiyor ama gösteri dünyasinda ayakta kalmalari kolay olmuyor. Geçtigimiz yüzyilda çikis yapan Shinhwa, 24 Mart 1998 tarihinde ilk kez seyircilerin önüne çiktiktan 14 yil sonra bile faaliyetlerini devam ettirmeyi basardi. Grup bu yil, 5 Mart günü, 24 Martta gerçeklestirmeyi planladiklari 14. yil dönümü konserini tanitmak amaciyla bir basin toplantisinda bir araya geldi. Shinhwa, toplanti esnasinda grubun ismini su sekilde söyledi: "Biz Hye-sung (grubun adinin bir üyesi ve ayni zamanda Korece'de 'kuyruklu yildiz' anlamina geliyor) gibi Jun Jin (baska bir üyesinin isminin anlami 'ileriye adim atmak') olan Shinhwa'yiz!" Ancak, her zaman oldugu gibi, alti üye uzun bir prova sonrasinda bile yanlis anlasildi. Ama odanin içerisindeki aydinlik ve neseli atmosfer, Shinhwa üyelerinin otuzlu yaslarin üzerinde olmalarina ragmen 90'li yillara geri dönerek gerçek bir Efsane (Shinhwa) olduklarini kanitladi.

Sirketiyle sözlesme imzaladiktan sonra bize yol gösteren Good Entertainment Genel Müdürü Park Kwon-young'a da tesekkür ederiz. Ve son olarak, geçen 14 yil boyunca bizimle birlikte gülen, aglayan ve bize olan inancini kaybetmeyen hayranlarimiza ve uzun bir düre daha bizimle birlikte çalisiyor olacak tüm Shinhwa Company çalisanlarina tesekkür ederiz. 14. yildönümümüz bir son degil, sadece bir baslangiç. Lee Min-woo (Lee): 14 yillik kariyerimiz boyunca bir takim single, mini-albüm ve stüdyo albümü çikardik ve o kadar çok sarkimiz oldu ki, biz bile hepsini hatirlayamiyoruz. Fakat onuncu kaydimizi yapacaksak bunun tam bir albüm olmasi gerektigini hissettik. Sadece bizim yeni kaydimiz için bekleyen hayranlarimizin onuncu albümümüzü dinlerken keyif almalarini istiyoruz. Fiziksel olarak yorgun olmamiza ragmen, her üye sarkilari kaydederken büyük bir çaba sarfetti. Bu sarkilari sahnede sergilemekle ilgili yüksek beklentilerimiz var. Harika bir gösteri olacagini umuyoruz.

10asia: Sarkilari olustururken ve kaydini yaparken bazi zorluklar yasamis olmalisiniz.
Jun Jin: Yorgun hissetmek yerine, bu kadar uzun bir süre sonra sahneye döndügümüz için sadece gerçekten heyecanli ve mutluyum. Ben ve diger üyeler en küçük ayrintilar hakkinda bile toplanti yapmak için sürekli bir araya geliyoruz ve bir seye karar vermeden önce herkesin fikir ve görüsleri aliyoruz. Ama yasadigimiz zorluklardan bazilarini tam olarak belirlemek gerekirse...bu muhtemelen Eric olur. Eric birkaç sarkiyi kendisi yazip hazirladi ve kayit stüdyosunda bizi o kadar zorladi ki neredeyse öldürüyordu. Bu, becerilerimizi gelistirmemize dair iyi bir kisim. Albüm hala Shinhwa'nin tarzini yansitirken, ayni zamanda daha genis kitlelerin de keyifle dinleyebilmesi için farkli tarzlarda sarkilardan olusmakta. Yeni türdeki sarkilarimiza uygun yeni koreografiler hazirladigimiz için piyasaya çikmasini beklemeye deger.
Eric: Albümümüze adini veren parça yurtdisindan satin alindi. Lee, sarki sözlerini ve koreografiyi hazirlayarak bu süreç boyunca ekibe önderlik etti. Ilk kez elektronik müzik türünde bir sarki söylemeyi deneyecektik. Bu yüzden, görünümümüzü ve tarzimizi buna uydurabilme konusunda endiseliydik. Ama sonuçtan memnunum. Albümümüzü dinlerken, yeni tarzdaki sarkilardan gelen tinilarin yani sira, eski tarzimiz olan ballad türünden sarkilar ve danslar ile dünü, bugünü ve gelecegi hissedeceksiniz.
10asia: 24 Martta baslatacaginiz konserin toplamda 20.000 adet olan biletlerinin tamamini yalnizca 40 dakika içinde satmayi basardiniz.
Shin Hye-sung (Shin): Bu konuda son derece heyecanlandik. 14. yildönümü konserimizin daha önce yapmis oldugumuz diger gösteriler ile kiyaslandiginda farkli bir anlami var. 2008 yilinda gerçeklestirdigimiz 10. yildönümü konserimiz esnasinda, hepimiz zorunlu askerlik görevimizi tamamladiktan sonra grup olarak bir gösteri düzenleyecegimize dair hayranlarimiza söz verdik. Bu yilki konser ile hayranlarimiza verdigimiz sözü tuttuk.
Jun Jin: Iyi bir dil, iyi bir silahtir ve biz sözümüzü tutmak istedik...
Eric: Jun Jin, bizim için bir sarki söylemek ister misin?
10asia: Çikis yaptiginiz günden bu yana 14 yil geçti. Tüm üyelerin farkli ajanslarla sözlesme imzaladiktan sonra bile hala birlikte çalisabilmesinin sirri nedir?
Kim Dong-wan (Kim): Kesin faktör Jun Jin. Bizim için bir sarki söylemeye ne dersin Jun Jin?
Jun Jin: 14 yil boyunca Shinhwa'yi ayakta tutmak gerçekten zor oldu ve sürekli herkesin destegini istedik.
Kim: Herhangi bir sirrimiz yok. Biz sadece sansliydik. Kim: Eric'in stüdyoda ne zaman yöneticilik yapsa yumruklarini siktigini hatirliyorum. (gülüyor) O zamanlarda Eric'e vurup kaçmayi düsünürüm.

Biz ayrica, bireysel faaliyetlerini baslatan ve bununla basarilar elde elde eden üyelere sahip ilk Koreli grubuz. Bu, Kore'nin ve dünyanin 14 yil boyunca hiçbir üye degisikligi olmaksizin, esas üyeleriyle ayakta kalan tek idol grubuymusuz gibi hissettiriyor. SMAP bir kez üyelerinden birini degistirmisti. Andy: En önemli seyin üyeler arasindaki iletisim ve güven oldugunu düsünüyorum.Birçok erkek idol birbiriyle kavga ediyor fakat konusarak bunun üstesinden gelebilirler. Birbirleriyle konusarak anlastiklari ve güvendikleri sürece Shinhwa gibi uzun süre ayakta kalacaklarina eminim.
10asia: Su anda mevcut olan gruplar arasinda Shinhwa'ya benzer bir etkiye sahip olan var mi?
Eric: Tüm üyeler gerçekten BIGBANG'e benziyor. Bunu sadece söylemiyorum. Ne zaman Teen Top'u görsem geçmisteki halimize bakiyormus gibi hissediyorum. “But it finally happened.” People say this all the time when something, which seemed fairly impossible, happened for real. Countless number of idols come and go every year but surviving in the show business is never easy. Shinhwa, who made their debut back in the last century, managed to continue their activities even after 14 years since their first appearance to the public on March 24, 1998. This year, on March 5, the group gathered for a press conference to promote their 14th anniversary concert scheduled on March 24. Shinhwa practiced the phrase trademarked by themselves, "We are Shinhwa, who Jun Jin (a member of the group's name, also meaning 'moves forward' in Korean) like a Hye-sung (another member's name meaning 'comet.')" However, like always, the six members got it wrong even after a long rehearsal but the light and playful atmosphere in the room proved that Shinhwa is still the same Shinhwa we knew back in the 90's even when the members are way over their thirties.
10asia: How does it feel celebrating your 14th year anniversary of debut?
Eric: We first want to thank Lee Soo-man, the C.E.O of SM Entertainment, for seeing something in the six of us and putting us together under the name Shinhwa. We thank Park Kwon-young, the C.E.O of Good Entertainment, who helped us find our place after signing with the firm. We also thank our fans who believed in us, cried with us and laughed with us during the last 14 years, the rest of Shinhwa members as well as the staffs in Shinhwa Company who will be working with us for a long time. Our 14th anniversary is not the end but it is just the start. We hope to fulfill our singing activities for a long time at the center of this business and we want to become a model for other rookie idol groups. It takes time to build a masterpiece. That is why we want to show everyone that when something is old it doesn't make it shabby, proving the sophistication and tradition in our group.
Shinhwa: (claps) We are Shinhwa!
10asia: You guys are making your comeback in four years with your tenth full-length album, while singles or mini-albums are the trend.
Lee Min-woo (Lee): We have released a number of singles, mini-albums and studio albums during our 14 years of career and we have released so many songs to date that we can't even remember all of them. But, we felt that if Shinhwa was going to unveil their tenth record, it should a full-length album. The tenth album is solely for those that have waited for our new record and we just want our fans to be satisfied with what they listen to. Though we are physically tired, each member put in a lot of effort in recording the songs and we have high expectations on performing them on stage. We hope that it will be a great present.
10asia: You must have experienced some difficulties while preparing and recording the songs.
Jun Jin: Instead of feeling tired, I am just really excited and happy about returning to stage after such a long time. Other members and I get together constantly to have meetings even about small details and we gather everyone's ideas and opinions before making our decisions on something. But if I have to pinpoint some of our difficulties...it is probably Eric. Eric wrote and directed a few songs he wrote himself and he pushed us hard and nearly killed us in the recording studio. The good part about it was that our skills improved. I'm kind of embarrassed to say it myself but I feel that I improved in various aspects because I do both singing and rapping.
10asia: Can you give us an example of the skills that improved?
Jun Jin: I would sing you a song right now but it wouldn't be fair to unveil a song before the album gets released. How about if I hum it?
Eric: We have released a number of albums before but never kept the deadline. We used to push back release dates from two weeks, in minimum, to two months but this time it was different. We all worked really hard and even pulled off all-nighters. We didn't slack off and participated a lot in the process which is why we were able to release the album on time. Honestly, I whipped other members when they're not trying hard...(laugh) Now, should we listen to Jun Jin sing?
10asia: From all the members, who's vocal skills improved the most?
Jun Jin: It is Jun Jin.
Lee: All the members did a great job including Jun Jin (laugh). I'm sure a lot of people are wondering what genre of songs that our album will have. It's composed of songs in different styles that allows wider audience to enjoy, while it still holds Shinhwa's color. It is worth waiting for the release since we prepared new choreographies that fit our songs in a new genre.
Eric: Our title track was bought from abroad and Lee led the team in this one by making the lyrics and choreography, and directing the whole process. This will be our first to try an electronica song so we were worried how it would go along with our image and style. But I am happy with the outcome. Just like our old style, we have a number of ballad songs and dance tunes aside from our new genre and the listener will feel the past, present and future altogether through our tenth full-length album.
10asia: In just 40 minutes, you guys were able to sell out all 20,000 tickets to the concert that is to kick off on March 24.
Shin Hye-sung (Shin): We were extremely thrilled about that. Our 14th anniversary concert has a different meaning compared to other shows that we have done before. We made a promise with our fans during our 10th anniversary concert back in 2008 that all six of us will perform on stage once we are all done our mandatory military duties. This year's concert is our way of showing our fans that we kept the promise.
Jun Jin: A good tongue is a good weapon and we wanted to keep our promise...
Eric: Jun Jin, would you like to sing for us?
10asia: It has been 14 years since you made your debut and time has passed. What do you think is your secret to still being able to work together even after all members signing with different agencies?
Kim Dong-wan (Kim): The decisive factor is Jun Jin. Jun Jin, how about singing a song for us?
Jun Jin: It has been real tough in maintaining Shinhwa for 14 years and we ask for everyone's continuous support.
Kim: We don't have any secrets. We were just lucky. We have fought a lot in the past and unlike the other groups that disband the teams because of the conflicts and members' individual activities, I feel that those moments created a bond between all the members. And not avoiding what we had at every moment helped us to survive till today. We didn't insist on pursuing solo careers when working as a group, or thought that we have to juggle our solo careers and working as Shinhwa at the same time.
10asia: You have mentioned about fighting in the past, so were there any moments that solidified the team's bond while preparing for this album? (laugh)
Kim: I remember that Eric clenched his fists whenever he was directing in the studio. (laugh) I thought about hitting Eric and running away.
Lee: Once, Kim seemed pretty upset after the recording. He even asked me if I could direct him myself because Eric was putting pressure on him too much. Everyone has a different way of directing and cheering people up so they can do a better job. I also try to relay the emotions to the person by singing the song myself.
Kim: Lee is blowing his own horn. (laugh)
Lee: To be honest, Eric's style of directing is the right way. All that matters is to see how much effort one put in to get the best results and that itself is a fight with oneself.
Kim: I will ask Lee to direct me the next time.
10asia: Many idol groups say that Shinhwa is their role model. What kind of group does Shinhwa want to be and what kind of music would you like to pursue if you are still together even after ten to twenty years from now?
Jun Jin: Thank you for such a great question and Kim will answer it.
Kim Dong-wan (Kim): We can't say that we will sustain the group ten or twenty years more without any proper reason or preparation. But I think we will stop if the audience wants us to. We don't want to continue our activities if it is going to cause a loss. (laugh) We will continue with our activities if it makes us happy as well as our staffs. We don't exactly have a role model but we want to become someone else's role model.
Eric: We worked real hard to benchmark with Japanese group SMAP when Shinhwa was still with SM Entertainment and it worked. We were also the first idol group in Korea to have their members begin individual activities and we found some success through that. It feels like we are Korea and the world's only idol group that has stayed together for 14 years with its original members. SMAP had changed one of their members once. It is important to follow the current trends but what is more important is to have the listener to recognize the group Shinhwa from our music.
10asia: What if you were given a chance to switch members?
Eric: I was thinking about Kim!
Jun Jin: I think Kim can be the manager.
Kim: And I will be paid the same...
Shin Hye-sung (Shin): Our press conference is being broadcasted globally. (faces cameras) We are joking.
Eric: (faces Kim) I love you.
10asia: Andy, you are the producer of the idol group Teen Top. Do you have any advice for other singers that choose Shinhwa as their role models?
Andy: I feel that the most important thing is the communication between members and trust. Many male idols fight but they get over it after talking about it. I'm sure they will last long like Shinhwa if they talk, understand and trust one another.
10asia: Are there any current groups out there that has the similar impression to Shinhwa?
Eric: All the members really like Big Bang. I'm not just saying this but whenever I see Teen Top it feels like I am seeing our past. We looked really clumsy and was faced with a lot of difficulties when we first started out and they went through. Teen Top went through the same troubles and became No. 1. Seeing their clumsiness after winning first place was just...(laugh)
Jun Jin: The members of Girls' Generation were in elementary school when we were with SM Entertainment. Jessica and Hyoyeon wrote us letters back in the day and it makes me real proud and happy to see them turn into ladies and do so well.
Lee Min-woo (Lee): I am a fan of Girls' Generation and 2NE1 and I can remember that Hyoyeon danced really well when she was younger. I thought that she could be the next BoA and it is great that she is known for her dance skills in Girls' Generation. I know that there are many girl groups right now but I lost interest after T-ara. I know the name of the groups but I can't remember the name of the each member. (laugh)
Jun Jin: There is a girl group named Stella and this guy who appeared in their music really stood out (referring to himself). I thought to myself wow how can someone act like that? Stella's songs are really great and I think in two years...
Eric: Two years?
Jun Jin: Ah, what I mean is that after a year they will become one of the best girl groups.
Eric: I hope you aren't just saying that. (laugh) Jun Jin was the male lead in Stella's music video for their song "U.F.O" and he said that he was nervous and it was difficult because he hasn't acted in a long time. And after seeing the video, it turns out that all he had to do was to stay still because he played a robot.
Jun Jin: It was really cold during the shoot.
10asia: The current music scene is a lot different from four years ago when Shinhwa was active. Does the group have some kind of secret weapon to dominate music scene?
Lee: We aren't here to compete with the idols. The main concerns we had while making the album was which track should be the title song so we could appeal to the public. We don't have a secret weapon per se though it would have to be that the audience will say that performance is what Shinhwa is about. We are just the same as who we were in the past. Though we have a hard time catching our breath due to lack of sleeping, we are still the same.
Eric: The difference is that many of our juniors and the idols are really good to the extent that we admire many of them. And we thought about ways to show something different by comparing ourselves to them. I honestly want to show our development during the last 14 years to the singers that grew up watching us. And I can say that our conditions are pretty good from practicing.
Kim: Ah, our secret weapon is Lee.
(All members become quiet)
Jun Jin: I apologize!
Kim: You can tell that Lee is our secret weapon after watching our performance. I will just be hiding behind him. (laugh)
10asia: How is the shoot for jTBC's "Shinhwa Show" coming along?
Jun Jin: We always wanted to have a show with our name on it and we had our first shoot last weekend. I had to hold back my tears after seeing how hard the members were practicing. And the audience will see a different side of each member like their cheerfulness and charm.
10asia: Any final words?
Andy: We will work even harder since we are making our comeback after a long time. We hope to resume our activities with the mindset of a rookie and that the audience will get the same impression as they did when we released our first album.
Kim: We ask for a lot of support since Shinhwa is officially starting their activities after a long time. Help us!
Jun Jin: A masterpiece is not made in a day...I apologize. (laugh) We will work happily and cheerfully and hope to work real hard that people will remember that we are Shinhwa.
Lee: I am really happy even though it's been a while since we last stood in front of an audience and I feel a bit awkward to see all these cameras flashing at us. I want Shinhwa to be a group that rewrites history. We want to show our best and we hope that will be set in history.

Many Koreans enjoy chicken ginseng soup or samgyetang on three special summer days -- Chobok, Jungbok and Malbok that are said to be the hottest days of the year. Collectively called Sambok, they fall between June and July in the lunar calendar and come at 10-day intervals. This year, they are July 19 and 29 and Aug. 8.
Samgyetang is a whole chicken stuffed with glutinous rice, ginseng and other healthy ingredients like jujube, garlic and ginkgo nut. It is said to invigorate the appetite of people who have grown tired from the summer heat.
Each ingredient of samgyetang has its own special function. Ginseng is a health specialty coveted in and by itself as it is effective in tackling multiple symptoms. It rejuvenates the body, boosts metabolism, reduces stress, treats diabetes, improves respiratory illnesses, spurs the digestive organs, and has anti-carcinogenic capabilities.
According to oriental medicine guides, garlic detoxifies the body, jujube quenches thirst, and ginkgo nut protects lungs that are apt to be weakened by low energy levels. All of these ingredients are then cooked with chicken, rich in protein and essential amino acids. It is no wonder that samgyetang is an unrivaled healthy food at the hottest period of summer.

Bibimbap, a Dish with Many Faces

Bibimbap is a traditional Korean dish mixed with sauteed and seasoned vegetables, meat, and Korean chili paste over steaming rice. It can be served either cold or in a sizzling stone pot. The latter type is called "dolsot bibimbap." Toppings such as raw or fried egg and sesame oil can also be added.
Bibimbap is one of the most popular Korean dishes and quite well-known to many foreigners because of its unique combination of ingredients and spices. But it is also healthy, being rich in fiber and vitamins but low in cholesterol. Eating a bowl of bibimbap has come to be compared to taking multiple vitamins as the mixture of assorted vegetables and beef with steamed rice provides a wide range of nutritional sources at a time.
There are many regional variations of this dish as well as individual ways of preparing it. For example, for the most famous kind of bibimbap from Jeonju, the rice is specially prepared by steaming it in meat broth and then bean sprouts are added to the rice during the last steaming. Yukhoe, Korean-style raw beef, is also laid on top instead of the plain grilled minced beef served in ordinary restaurants.
There are many conjectures about how bibimbap came into being. Some say it originated in the royal court as one of the rice dishes served to the kings of the Chosun Dynasty. Others claim that the first type of bibimbap was invented after traditional rites or ceremonies in which various kinds of food are laid out symbolically to serve the ancestors, by mixing the leftovers together.
Another guess involves the busy season for farmers. Proponents of this theory believe that farmers who required a hearty meal for work during the harvest season but did not have time to cook complex meals so they simply came up with the idea to mix various ingredients together to get all kinds of nutrients into one bowl.

Ajumma kelimesi (orta yasli ev hanimlari için kullanilan yerel bir terim) Kore toplumunda, metroda koltuk kapmak için insanlari iteleyen, çocuklari hakkinda böbürlenen veya zaman, yer ve uygunluguna bakmadan pazarlik yapan bir bayan gibi olumsuz düsünceler akla getiriyor.
Bu, bir ajummanin tipik çizimi olabilir ancak 2008 global ekonomik krizinden sonra harekete geçip yerel ekonomiyi canlandirmada büyük rol alanlar bu kadinlardi.

Ulusal Vergi Servisinden alinan en son veri, 2010 yili itibariyla yerli girisimci sayisinin 962.000 oldugunu ortaya koydu. Banul Story’den Song Young-ye

Örgü sirketi Banul Story’nin (“banul” Korece’de “sis”) kurucu ve baskani Song Young-ye, ilk banka kredisi denemesinin hikayesini anlattiginda gözyaslarini saklamaya çalisarak bir an duraksadi.
Song 13 yil önce kendi isini kurmaya hazirlanirken küçük miktarda bir kredi için bankaya gitmis fakat müdür tarafindan yalanci muamelesi görmüs.

Sirket, Anmyeon Adasinda düzenlenen uluslar arasi çiçek festivali Korea Floritopia ve Samcheok International Cave Expo Korea da dahil bölgesel fuar ve festivaller için büyük ölçekli projelerle sürekli olarak isim yapiyor.

I ECO’dan Hong Ok-joo

10 yil önce kocasi öldügünde Hong Ok-joo, aniden aile reisi ve iki oglunun tek bakicisi haline gelmisti.
Kuzey Seoul, Mapo-gu’daki ofisinde, “Çok kötüydü. Siir yazmaya devam etmek istiyordum ancak esim öldükten sonra para kazanip aileme bakmam gerekiyordu,” dedi.
Green Korea’nin Incheon subesinin aktif bir üyesi olarak Hong, çevresel etkinliklerle her zaman ilgili oldugunu söyledi.
“Ne kadar yikilmis olsam da degisiklik yapip cesur olmak için bunun bir sans oldugunu düsünen bir yanim da vardi,” dedi Hong.
Tek varligi olan dairesini satti ve Kuzey Amerika ve Avrupa’da benzer ürünler üzerine yillardir yaptigi arastirmadan sonra 2006’da yikanabilir, pamuktan ped satan I ECO’yu kurdu.
“Geriye bakinca, yapilmasi mantiksiz ve düsüncesizceydi. Fakat gurur duyacagim, çevreye ve insanlara zararli olmayan bir ürün satarak para kazanmak istedim,” dedi.
“Acemiligimi telafi etmek için gerçekten çok sey ödedim. Girisimcilik dersleriyle isletmenin temellerini ögrenmeden hammadde ögrenmeye ve ürünlerimi yapip fabrika bulmaya kadar her seyi kendim yapmak zorundaydim.”

Ürünlerini girisken bir sekilde tanitarak ve internet üzerinden satislarda daha aktif olarak farkli türdeki saticilari garanti etmek üstüne çalisanlariyla planlar kurdu. Geçen yil, I ECO satislardan 300 milyon won kazandi ve sirket birkaç yil içinde bunun iki katini kazanmayi bekliyor.
Sirket, Japonya ve Avustralya’da da satis yapiyor ve Hong, Asya’daki diger ülkelere de açilmayi planladigini söyledi.

Before starting her own business in 1999, Ha Hyun-young said she died a little inside every day that she was home as a young, 30-something mother of two boys.
“I was embarrassed that I had no skills and wasn’t able to support myself financially,” she said at her office in Dogok-dong, southern Seoul.
Ha, now 50, is the founder and CEO of landscaping company Hayoung Green, which became known for its flower installations at the Blue House.
“I didn’t want to make money by selling stocks or other things that many housewives do at home. I wanted to make money by actively doing something and contributing to society.”
The word ajumma (a local term addressing middle-aged housewives) conjures up many negative images in Korean society, whether it be of a lady shoving people on the subway to get a seat, bragging about her children or bargaining relentlessly regardless of time, place or appropriateness.
This may be the typical caricature of an ajumma, but after the global financial crisis of 2008, it was these women who stepped up to the plate and played a large part in reinvigorating the local economy.
In general, the number of working women here has inched up steadily in recent years.
Last year, there were a total of 14.15 million working women in the country, according to Statistics Korea. This was a 2 percent rise from 2010, when the number of working women in the nation of 48,875,000 surpassed the 10 million mark for the first time ever.
But behind this statistic, there is a bitter reality. The data shows that the fastest growing age group among working women last year was women in their 50s. Experts point out that the reason the number of working women is on the rise is because many married women in their 50s have started entering the work force as low-wage employees.
“In order to financially support their families in the aftermath of the global financial crisis, more women in their 50s are seeking job opportunities,” the Samsung Economic Research Institute said in a report last year.
But while many of these women are seeking jobs, there is another group of middle-aged women who have decided to take matters into their own hands and launch their own businesses.
The most recent data from the National Tax Service put the number of local entrepreneurs at 962,000 as of 2010. Close to half of them, or 47 percent, were women and of them, the majority were middle-aged women in their 40s and 50s. The average age of female entrepreneurs in Korea, according to the Small and Medium Business Administration, is 43.
“It is very difficult for middle-aged women to find jobs, as many of them have little or no experience in the workforce after being busy with taking care of their families,” Kim Youn-joong, a business consultant at the Nambu Women’s Development Center, said. “For many of these women, entrepreneurship is becoming a better option.”
The Korea JoongAng Daily met with three middle-aged female entrepreneurs who stamp a proud “A” in ajumma.
Banul Story’s Song Young-ye
As she told the story of her first attempt at a bank loan, Song Young-ye, the founder and president of knitting company Banul Story (“banul” is “needle” in Korean), stopped for a moment, holding back tears.
When Song was preparing to launch her business 13 years ago, she went to the bank for a small loan but was taken for a liar by the manager.
“My husband’s business went bankrupt during the Asian financial crisis in 1997. The bank manager thought that I was trying to get a loan in my name instead of that of my husband, who had fallen into the ‘delinquent borrower’ category, in order to salvage his business,” Song said at her office in Myeong-dong, northern Seoul.
“They wouldn’t believe that an ajumma like me was planning on starting a business. I didn’t know why I had to listen to these strangers tell me I was a liar and a nobody. I cried at home for days after that.”
The incident, however, didn’t stop Song from pursuing a business of her own, and in 1998, she launched a Web site that provided knitting texts and sold related products including needles and thread.
“Opening the site exposed me to the outside world and to people whom I would otherwise never have met,” she said.
She is the first to admit that she had “no clue about the finance part of starting a business.” In fact, Song didn’t even see the first 4 million won ($3,546) she made through her Web site because she didn’t know how to claim her earnings through the connected online service site she used.
Still, Song said the road to success was far from a level one for her and she often faced discrimination as a female company director.
“Our products were sold at the main branch of Lotte Department Store in Seoul for a short time. But the buyers there kept insisting that we send ‘male employees who could drink well’ and the friction started from there,” said Song, adding that the company left Lotte after two months.
But that wasn’t the main challenge for Song during this period.
“When I started the company, my children were still in elementary and middle school and didn’t understand why I had to be away from them. I felt so guilty leaving them to take care of my business,” she said.
“But now, they tell me how proud they are of me. Recently, my youngest daughter even wrote a paper about my business for her university economics class.”
By mid-2000, Banul Story had more than 150 branches across the country. It has accrued a steady 3.5 billion won in sales each year for six to seven years straight.
Meanwhile, she’s published several books under her name on knitting, some of which have been translated into Chinese and sold in China.
“Now, I make much more than what my husband makes!” she said, laughing. “Through this business, I think I realized a part of myself that I had never guessed was inside me. It’s hard work but now that I’ve done it, I can’t imagine my life without this business.”
Hayoung Green’s Ha Hyun-young
After 15 years of being a homemaker, Ha Hyun-young was ready to face the real world.
“I would read about successful female business leaders in magazines and I felt so envious. Then I would look at myself in the mirror and feel ashamed and helpless,” she said.
“Raising two boys was rewarding, but when I was alone at home, I died a little inside every day. I think that secretly, I always wanted to be an entrepreneur and be in charge of my own business.”
With the less than 5 million won she had saved up over the years, Ha started a small flower shop within Yangjae Flower Market in southern Seoul in 1999.
On top of operating the shop by herself, she did research on flowers and plants, vigorously networking in the sector during her free time.
Ha’s hard work paid off, and the shop earned more than 3 million won per month at its height.
The shop’s success led her to launch an interior landscaping company, Hayoung Green, in 2001.
Under its motto of a “green life,” the company provides landscaping services for companies and individual homeowners. Ha now has 20 employees working for her.
The company has steadily been making a name for itself with large-scale projects for regional expos and festivals including Samcheok International Cave Expo Korea and Korea Floritopia, an international flower festival held on Anmyeon Island.
But it was the company’s flower installation around the fountain in front of the Blue House that put it on the map, making it a market leader in the 6.5 trillion won local landscaping market.
Along with her core business, she also operates Hayoung Academy, which offers classes on interior landscaping.
The CEO said that her goal through Hayoung Academy is to make it easier for others, especially homemakers like herself, to launch their own businesses or start a career in this field.
“I had to learn the hard way and research everything by myself. But I want the women who come after me to have as much knowledge as possible before stepping into this world,” she said.
Ha said that this is the happiest she’s ever been in her life.
“I got married when I was really young, when I was just 23 years old, and I didn’t know anything apart from staying at home and being a wife and mom until this business came along,” she said.
“There is a saying in Korean - a household goes to ruin if the hen sings [meaning that if a woman is more dominant in the household, the home goes to ruin].
“But I think that a household where the hen is silent is the one with the problem.”
I ECO’s Hong Ok-joo
When her husband passed away 10 years ago, Hong Ok-joo was suddenly thrust into the role of breadwinner and lone caretaker of her two sons.
“It was devastating. I wanted to pursue writing poetry but after my husband passed away, I needed to make money and take care of my family,” she said at her office in Mapo-gu, northern Seoul.
As an active member of Green Korea’s Incheon division, Hong said she had always been interested in environmental activities.
“As devastated as I was, there was a part of me that thought, this is my chance to make a difference and be brave,” said Hong.
She sold her sole asset, her apartment, and launched I ECO, which sells washable cotton menstrual pads, in 2006, after several years of research on similar products in North America and Europe.
“Looking back, it was probably an imprudent, rash thing to do. But I wanted to make money selling a product that I was proud of, that isn’t harmful for the environment or to human beings,” she said.
“To make up for my inexperience, I really had to pay my dues. I had to do everything by myself, from learning the basics of business through entrepreneur classes to studying raw materials to make my products and finding factories.”
With no business background or concrete finances, the CEO said that the company had a shaky start and faced closure numerous times after copycat products started appearing in the local market at cheaper prices.
“We had quite a media buzz going for us when we first launched, but soon, other companies with copycat products were replacing us in department stores and organic shops,” said Hong.
“The company was in the red for the first four years. I had to fire all my employees at one point and move the office to another location,” said Hong.
After the grueling first four years, Hong said that she decided to start over. She strategized with employees on securing different types of vendors, promoting her products aggressively and being more active with online sales. Last year, I ECO saw 300 million won in sales and the company expects to earn twice that amount within a few years.
The company is also selling in Japan and Australia, and Hong said she plans to expand the business to other countries throughout Asia.
“Contrary to what many people assume, there are many advantageous reasons for a company to have a woman as a leader. I guess the big obstacle for women would be balancing their family life with their business, and I was lucky in that sense because my children were so supportive,” she said.
“Though even during these times, when so many women are holding high positions and running companies, it still amazes me that some bank managers refuse to give me a loan because I am a woman,” she said.

In most surveys on Korean food, eight or nine out of 10 foreigners name bulgogi as their favorite Korean dish.
One reason for this is that bulgogi is seasoned with more familiar condiments than other Korean dishes. As bulgogi's taste is relatively mild, it is easier to integrate it into a Western diet. The dish is usually enjoyed by making vegetable wraps with kimchi, not unlike Mexican fajita or taco. If so, why not wrap bulgogi like them? This kind of mix-and-match is already happening in many fusion restaurants.
Bulgogi is believed to date back to the Koguryo Kingdom (37 BC - 668 AD). The first form was called "maekjeok" and contained a generous serving of beef, chives, and garlic seasoned thoroughly with soy sauce. But as Buddhism took hold, vegetarian food came to be preferred. This marked a brief hiatus for the carnivorous diet and the evolution of bulgogi.
However, with the Mongol invasion, the consumption of meat returned to the peninsula. In the Chosun Dynasty, bulgogi was called "neobiani," meaning thinly-spread meat. It was more heavily seasoned with soy sauce than today according to a Chosun-era book on living and farming, as sugar was expensive then.
To make the most of the dish, make sure to preheat the grill for about a minute. If the grill is not sufficiently heated, the meat tends to stick to the grill and get dry. Bulgogi should be taken off the grill when the juices start to run in little droplets, not when they flow freely.
An assortment of vegetables like mushroom, onion, ginseng, cabbage, and pepper can add to the flavor.
